It's not possible to highlight keywords directly in notes, sorry.

You can vote for Markdown in our Ideas forum for something like this (formatting for notes, in other words) or could use things like asterisks or dashes to format your note a bit manually. I hope this helps a bit for now, and thanks for your feedback! 💙
