email to inbox -- ignoring formatted "instructions"

No matter what I do, all the labels (e.g. "due", "location" etc) are all simply passed in as an attached note. Here's one I just tried and it happened again:

Priority: 1

Estimate: 2 hours
Location: home

Can anyone see what's wrong with this??

I'm having issues with emailing as well.
Tested this a couple of weeks ago, emailed to a list which worked.
Now, ignores the parameters in the email.
