How can I have the list that appears in Inbox (also list that prints) only show Todays Items?

A list shows all it's tasks. If you want to show only some of the tasks in a list you need to search for that (list:Inbox AND due:today) and possibly save that search as a smartlist. See the Help/FAQ for more info.
