I'm sure you could add a field with Status : Completed or a code number in the body of the email?

rtmraphael, you can use Smart Add to designate where you want tasks to go, and you can change your default list if that's more what you want to do.
Various closely related ideas along these lines have come up repeatedly, for years.
Completion via email, via IM, completion via clicking a URL in an email, etc.
