How do I enter due time?

On the website, you simply type the date and time, e.g. "tomorrow at 5pm", "August 1 14:00", etc. There are a lot of accepted formats; check out our Help page.
You can enter dates/times this way on the iPhone too: if you tap Custom at the top you get a freeform text area that accepts these inputs. It's just that the iPhone also allows the Picker.
