An individual might be on a committee, periodically sick, involved in a project etc.

Now any suggestions as to how to set up my RTM. Also, I like a set of tasks for a project. I think that these are often called sub-tasks. But I think RTM does not support these.

Any help would be greatly appreciated.

I would use tags for people and committees and lists for projects.
Regular lists are easier to work with, while smart lists are more flexible.

One advantage with tags is that one task can have several tags.
