Apparently you can still cycle through the hidden lists using the keyboard shortcuts ctrl+shift+leftarrow and ctrl+shirt+rightarrow, without having to find them in the tag cloud. This could be helpful especially to people who don't like to display their tag cloud.

Using the GreaseMonkey script RTMenhanced it's possible to choose exactly which regular lists are shown.
On a side note, the GM script Tag cloud colorizer let's you choose which tags to hide in the tag cloud.
As both of these are a per-computer setting, you can have different settings at work and at home for example.
Works best under Firefox.
