is there a keyboard shortcut for adding a START DATE?

I need to add start dates to my tasks quite a lot -- is there a keyboard shortcut for adding a start date to a task?
Also is there a symbol for start date in the Smart Add field (like "#" for tag)?

Yes use the "w" key as the shortcut and the "~" symbol for smart add.
