Default due date of "Today"

I really like being able to just type in a new task for later organization/filing in rtm4gmail, but the add-on seems to default all new tasks to "due today". This eats up about half of the vertical screen real estate.

Is there a way to either make the default due date anytime/unspecified, or not display "Today" below every item?

Yup, you can change the default due date for your tasks. The default due date affects starred and labeled emails, and tasks without due dates. This option is available by clicking on 'Settings' in Gmail, then 'Tasks'.
